I found German Cooking book by Robin Howe in our local secondhand bookstore, and begun experimenting. Needless to say, this particular recipe caught my eye; the name was good, and once tried, the recipe is a winner, too! Light, and yummy combination of flavors, that make a welcome change from traditional potato puree.
Ingredients - (Serves 4).
1 lb, apples, peeled, and cored,
1 lb, potatoes, peeled, and washed,
2 oz. (6 grams) bacon, sliced,
salt, pepper to taste.
Method
(1) Microwave (or fry) bacon slices till crisp, remove onto a paper towel, reserve.
(2) Place potatoes in a pot of water. Bring it to boil, and cook for 10 minutes.
(3) Add apples to a pot, and cook for another 5 minutes (till both are soft).
(4) Drain cooked apple potato mixture, and rice it or mash it together.
(5) Season with salt, and pepper, and sprinkle with crushed bacon, on top.
Serve with Pozharsky cutlets.
Bon Appetit!
