Yakitori

Glazed Yakitori skewers; popular Japanese street food. Easy to make, and great hot, or cold!

Ingredients - (Serves 4).
4 boneless, chicken breasts
1 bunch, spring onions
Shichimi Togarashi (Japanese Seven Spice Powder) (or paprika)
Bamboo skewers, soaked
Sauce
1 1/4 cup, light soy sauce
3/4 cup, mirin
1/2 cup, sake
1/2 cup, sugar

Method
(1) Combine sauce ingredients (soy sauce, mirin, sake, and sugar) in a saucepan. Simmer approximately 20 minutes, stirring occasionally, till the sauce thickens. Reserve.
(2) Cube chicken breasts into inch sized pieces.
(3) Wash spring onions, and cut them to the same length sections.
(3) Skewer pieces of chicken and onions onto each skewer.
(4) Place chicken-onion skewers on a hot grill, and cook briefly (till meat turns white).
(5) Remove skewers from grill. Glaze chicken-onion contents with prepared Yakitori sauce, on all sides.
(6) Place back on a grill, cover, and cook till golden brown.
Serving -
Goes well with cooked rice.

(1) If you are not familiar with cups, assume an empty, 15 ½ oz. size can to have 2 cups capacity (1 cup =8oz. =227g.),
tsp. = teaspoon,
tbsp. = tablespoon,
1lb = 453 grams
