Goose Leg "Normandy"

Ingredients - (Serves 4).
4 whole goose legs
salt, and pepper
2 small onions
2 cups, sweet apple cider/juice
4 slightly sour apples
8 stems thyme
8 juniper berries, 2 tsp, sugar

Method
Pre-heat oven to 390F (200C).
(1) Season goose legs with salt, and pepper, and place them in a roasting tin. Place over medium hot, stove top. Fry 10 minutes, turn on the other side, and cook for another 10 minutes, to let the fat out.
(2) Peel, and quarter onions (lengthwise), and add them to the roasting tin. Cook goose-onion mixture for another minute.
(3) Discard goose fat, and add 1 cup of apple cider/juice to the tin.
(4) Place tin in the oven (no fan!), and roast for about 50 minutes.
(5) Core apples. Place thyme stems in each apple.
(6) Add apples, and crushed juniper berries to the roasting tin. Sprinkle with sugar, add remaining cup of apple cider/juice, and roast for another 20-25 minutes.
Serving -
this dish is great with mashed potatoes, and red cabbage.

(1) If you are not familiar with cups, assume an empty, 15 ½ oz. size can to have 2 cups capacity (1 cup =8oz. =227g.),
tsp. = teaspoon,
tbsp. = tablespoon,
1lb = 453 grams
